SMOKED ORANGE ACID

Our Homage to Mezcal

The orange rinds, up-cycled from Beepublic Coffee, were slow smoked for 4 hours on oak chips to create this delicately balanced, bright yet smokey spirit. The spirit has a subtle candied-orange finish due to caramelization of some the orange rinds’ sugars. With a gentle haze, this Acid boasts a delightful smokey citrus aroma bursting with flavor.

Our good friends at Beepublic Coffee have recently begun making their own organic orange juice in-house. Instead of simply discarding the leftover rinds from the juicing process they were looking for a better solution and that’s where we came in. To partner together and collect the waste before it hits the landfill, and then infuse them into our distillation process.

Use it like this…

Smoked Negroni (high brow)

• 1 oz Smoked Orange Acid
• 1 oz sweet vermouth
• 1 oz Campari
• Stir, strain over ice, torch an orange peel garnish

Smoked Orange Soda (low brow)

• 1 oz Smoked Orange Acid
• 3 oz orange soda or tonic
• Orange slice

COFFEE ACID

Delicate, Aromatic and Subtly Complex

Delicate, aromatic and quietly complex. Soft cocoa notes, gentle nuttiness and lifted aromatics sit over a light earthiness with just a hint of roast on the finish. Made in collaboration with our neighbors at Cafe Grumpy, this batch begins with spent cold brew grounds left after their production. Cold water extraction brings out a smooth, rounded spectrum of coffee flavor while many aromatic compounds remain in the grounds.

Our vacuum distillation process gently draws out these remaining compounds at low temperatures, capturing delicate aromas that do not appear in a cup of cold brew. The result is a second expression of the same ingredient revealing flavors that might otherwise stay hidden.

By up-cycling ingredients that would normally be discarded, we continue our mission to challenge what food waste looks like and show the potential still living in what is used.

• 1 oz Coffee Acid
• 1 oz bourbon
• 1 oz Campari

• 3 oz tonic

CELERY ACID

Crisp, Green, Quietly Powerful

This spirit captures the vivid freshness of celery—bright vegetal notes layered with subtle minerality and a clean, earthy depth.

Made in collaboration with our neighbors at @farm.one ,this batch was crafted entirely from celery grown on-site—produce that would have otherwise been composted if no buyer was lined up at harvest. Working under the same roof has allowed us to explore the full potential of ingredients grown just steps away from the still, transforming unused plants into something entirely new.

By up-cycling ingredients that might never make it to a plate, we’re continuing our mission to challenge what food waste looks like—and show how much possibility still lives in what’s left behind.

Salad G&T (high brow)

• 0.5 oz Celery Acid
• 0.5 oz Pepper Acid
• 0.5 oz cucumber gin
• 3 oz tonic

Celery Tonic (low brow)

• 1 oz Celery Acid
• 3 oz lemon soda or tonic
• Lime wedge

SMOKED GRAPEFRUIT ACID

Bright, Smoky and Sharply Defined

Zesty, tangy and vibrant grapefruit aromatics sit above a subtle layer of oak smoke that adds depth without overpowering. The finish is dry, precise and lingering.

Made in collaboration with our neighbors at Place Des Fêtes and Golden Ratio, this batch begins with leftover grapefruit rinds from Place Des Fêtes. Our vacuum distillation process lifts the bright citrus oils while integrating a gentle touch of smoke to create a complex spirit that highlights freshness and nuance.

• 1 oz Smoked Grapefruit Acid
• 1 oz tequila (blanco or lightly smoked if you want to lean into the profile)
• 0.5 oz dry vermouth
• 3 oz tonic or grapefruit soda
• Grapefruit peel

Smoked Grapefruit Soda (low brow)

• 1 oz Smoked Grapefruit Acid
• 3 oz grapefruit soda or tonic
• Grapefruit wedge

CHAI ACID

Warm, Fragrant and Comforting

Bold cinnamon, cardamom and black peppercorn notes layer over ginger and black tea with a velvety, warming backbone.

Made in collaboration with our friends at Dona, this batch begins with spent chai spices left after their Masala Chai concentrate. Even after brewing, these spices still hold bright aromatics and rich flavor. Our vacuum distillation process gently captures these remaining compounds to create a layered, aromatic spirit full of warmth.

By up-cycling ingredients that would normally be discarded, we continue our mission to challenge what food waste looks like and reveal the hidden potential still living in what is left behind.

Ingredients: spent chai spices (cinamon, cardamom, black peppercorn, ginger, black tea), neutral grain spirit
